Menu Plan Monday: Week of February 16

It's another busy week here; my Troop's Girl Scout cookies are in and we've got lots of work to do in getting them out to our customers. Everyone at my house (including *yours truly*) is getting over the strain of the flu that our flu vaccines last fall didn't cover, so I've got plenty of food on hand from last week to plan my menu.


Spaghetti & Meatballs + Salad
(Nothing fancy; Ragu sauce + Armour Meatballs a la Crockpot)


Grilled Chicken with Black Bean & Corn Salsa over Mixed Salad

(The Black Bean and Corn Salsa is easy to make with canned ingredients you have on hand; you can even skip the chopped cilantro and extra spices if you've got jarred salsa on hand to mix in instead. I also like to use Ranch dressing on top and some crushed corn chips - whatever I have in my pantry.)


Meatloaf + Twice-Baked Potatoes + Valley Fresh Steamers veggies


Crockpot Macaroni & Cheese and Smoked Sausage + Salad


Pepperoni Stuffed Pizza Biscuits + Carrot & Celery Sticks


FREE NIGHT - seriously busy day of activities, so we'll probably clean out the leftovers.

  3. The FD: I've made that copycat White Castle recipe before and they are GOOD!! And just the right size for kids. YUM!!
