I stocked up on the last day of the Kroger Mega Savings Event (yesterday 2/1) and I'm psyched for the Daytona 500 sale promotion at Kroger this week. My pantry is *happy*.
I haven't cooked the soup from last week so I'm moving that over to this week. It looks to be a terribly busy week for me so I'm planning easy meals that can cook in the crockpot.
Here's what I've got:
Monday
Cincinnati Chili {made with Gold Star spice packet} + salad
Tuesday
O'Charley's {copycat} Potato Soup + rolls
{FYI: I'll use real cheese in this, not Velveeta!}
Wednesday
Slow Cooker Chicken Enchilada Casserole + Pinto Beans and Tortillas (with some lettuce, tomato, etc)
Thursday
Honey Baked Chicken + Rice + Veggies
Friday
Armour Italian Meatballs and Peppers Penne + salad
Saturday
Slow Cooker Sausage with Mixed Barbecue Beans + rice
Sunday
Free day!
