Double Duty Dinners: Dinner + Appetizer

It's time to start thinking about Easter dinner - what to make and when to make it.

We host Easter at our house each year; everyone pitches in and brings something to share but I still have the lion's share of cooking to do.

This week, I had some extra ground beef in the freezer so I thought I'd make a dinner for next week as well as an appetizer for Easter; here's what I cooked:

:: Mexican Lasagna

:: Cajun Meatballs

Both recipes were easy - I had all the ingredients on hand and the prep for both took only 15 minutes combined. They also both bake in the oven at the same temperature, another nice and easy way to get the job done.

Here's the finished products, cooling and draining:



The Mexican Lasagna I'll warm up and serve with diced tomatoes, shredded lettuce, sour cream, salsa, and (my personal fave) guacamole. The Cajun Meatballs will go in the freezer until Easter when I'll make the sauce and serve them up.

Both of these dishes smelled very, very good! I love the way my house smells when there's good stuff cooking in the kitchen.
