LOMO: Leftover Makeover {Sloppy Joe Pizza}

We had Sloppy Joes (a la Manwich) this weekend; I had quite a bit of leftover filling that I stashed in the freezer with the idea that I could LOMO it this week.

Here's what I started with:


Leftover Sloppy Joe meat

Mexican cheese blend and an extra can of Manwich sauce

I also had some pizza dough that I'd made in my bread machine; you could just as easily use some canned refrigerated pizza dough or a premade pizza shell for this idea.

I spread the Sloppy Joe meat on the pizza dough and added about 1/3 of a can of the Manwich sauce to it to make it saucy enough (I'm feeling the urge to write a bad British pun about cheeky pizza, but I'll let that pass!). I topped it with the cheese and baked at 400F for about 20 minutes.

When it cooled, I decided to add a little more Mexican flair to finish it. I topped it with shredded lettuce, diced tomatoes, a dab of sour cream, and a dash of hot pepper sauce.

It is GOOD! Definitely a recipe I'll remember and use again.
