It's nearly May and this year, our two oldest are both playing sports at the same time (t-ball and softball). Adding to the craziness of trying to balance two team schedules for the first time, we've got events planned on every weekend in May.
It's a busy, busy time of year, isn't it?
In order to *attempt* to save my sanity, I'm doing a Double Duty Dinner Menu Plan; I'll cook double amounts of each main dish listed and freeze the extras for next week where I'll serve them up again...with a fantastic new twist! {Or so I hope!}
If this works well, I'll so the same type of menu plan again in two weeks on Monday, May 11.
Here's the plan with the items I'll make in DOUBLED quantities in bold.
Monday
Turkey Sandwiches, fruit, leftover pasta salad
Tuesday
Spaghetti and Meatballs
Wednesday
Oven Fried Chicken + Sweet Potato Oven Fries
Thursday
Caramel Apple Pork Chops (don't those sound YUM?!) + steamed veggies and Rice-a-Roni
Friday
Grilled Bacon Wrapped Burgers (life is better with bacon!) + Hot Dogs + tossed salad and baked beans
Saturday
Honey Mustard Grilled Chicken over Fettuccine with Sweet Pepper Cayenne Sauce + tossed salad and bread
Sunday
Free Day!
