Menu Plan Monday (*a-hem* or Tuesday), Week of July 27, 2009



This is technically more of a Meal Plan Tuesday post since I'm getting it up so late; we had a quick dinner of Tacos on Monday night since I was still getting through all the fun of unpacking from BlogHer.

I am happy to report that all the dinners I pre-cooked and froze last week during my Double Duty Dinners cooking week were totally gone from my freezer; the kiddos and Knute ate 'em up while I was gone. Double duty cooking (or consolidated cooking or once a month cooking - whatever you want to call it) really helps me to plan ahead to help get dinner on the table during my busiest weeks.

This week, I'm keeping it easy and cooking up what's hanging out in my freezer and veggie drawer since I don't plan on Krogering until Thursday (although I've already grabbed about $10 of fruit and milk at Walmart).

Smoked Sausage and Zucchini Saute over rice

(I have some lovely zukes and summer squash from a friend's garden that I'm using in this easy summer recipe.)

Italian Chicken Skillet + fresh bread a la bread machine (this Amish Bread recipe looks good)

Thursday

Copycat LaRosa's Pizza + salad

Friday

Free day!

Saturday

Sloppy Dogs + BLT Pasta Salad

Sunday
Mexican Chicken Kiev + Slow Cooker Refried Beans

    Not sure I met you at BlogHer, but saw from Org Junkie that you were roomies with Tricia from @onceamonthmom. Sounds like we might have been in the same foodie panel - recession cooking.

  2. Gudrun: I think the interwebz had a big hiccup on Monday since we're all so behind from BlogHer!

    I missed that session - I think I was in the business session during that time. Wish we had met - Tricia is wonderful.
