Menu Plan Monday: Summer, Summer...Cooking, Cooking?



Summer has finally arrived with a vengeance here in SW Ohio; we've had an unusually cool summer thus far but this weekend was a steamy one.

I love cooking during three seasons of the year; summer, however, I would happily skip if I could! Thank goodness for the grill, the crockpot, and salads of all kinds.

This week, I have lots left over in my freezer from last week; I didn't cook at home all weekend since I was off at camp with my Girl Scouts on Saturday night and we were at a family get-together on Sunday. I've got meals planned from last week (a meal plan I didn't get around to posting *blush*) that I'm putting on this week's menu as well as a bunch of leftovers from our campout that came home with me, the trusty Girl Scout leader.

Monday

Awesome Slow Cooker Pot Roast + Egg Noodles and Salad (rolled over from last week's menu)

Tuesday

Tacos with all the fixings (leftover from our Walking Tacos my Girl Scout troop made on Saturday night)

Wednesday

Cheese Tortellini (I got a 2 lb bag for FREE from Schwann's - did you register for your $10 free food to new Schwann's customers yet? Click here and see if you're eligible! ) with Marinara Sauce + fresh bread a la bread machine (this Amish Bread recipe looks good and I didn't bake it last time I had it on my menu *blushes again*)

Thursday

Cincinnati Chili + salad

Friday

Free day! (Parish Festival - my hubs turn to volunteer)

Saturday

Leftover Makeover: I'm using the leftover pot roast from Monday to make Shredded Beef Enchiladas - yum!

Sunday

Free Day! (Parish Festival - my turn to volunteer)
