Meal Plan Monday | Week 2 of My 5 Week Plan {Plus May is Officially Here!! HALP!}

I plan my family's dinners in five week blocks to maximize my savings at the grocery store and minimize my stress at dinner time. You can read more about my strategy here in my Q&A post here.

We've had just a *wee* bit of rain here in SW Ohio - my poor brother-in- law slugged through the rain yesterday for all 26.2 miles of The Flying Pig Marathon. High five to him and all the runners!

Our opening day games on Saturday for t-ball and softball were also cancelled due to the rain which means we'll have to squeeze those games in somewhere this month as well as the team pictures they missed, too. Oh, it's gonna be a BUSY month!

Just for giggles, I wanted to share this recipe for Kentucky Butter Cake I made for our pre-Pig family get together on Saturday; my dad had dropped off some farm eggs for us and I wanted to use some of them since I'd already bought (2) dozen eggs last week. This cake calls for four eggs.

I subsituted lemon juice for the water in the butter glaze and peeps it was a GOOD decision on my part! We piled vanilla ice cream and strawberries on top of the cake and noshed on it after grilling out - {sigh} - YUM! Easy, tasty, and springtime-y. ;-)

Here's what I'm making this week:

Week 2: 5/3-5/9
Monday: Mini Cheeseburgers, Sweet Potato Oven Fries
Tuesday: Taco Night!
Wednesday: Italian Pepper and Sausage over Penne Pasta
Thursday: Breakfast for dinner (I think I might try these Gingerbread Pancakes)
Friday: Grilled Brats & Dogs, 3 Bean Salad (+ Grill Chicken for later)
Saturday: Cold Grilled Chicken Salad, Rice (Use Chicken from Saturday)
Sunday: Happy Mother's Day! FREE NIGHT, baby!
