Meal Plan Monday | Pantry & Freezer Challenge Week!



I plan my family's dinners in five week blocks to maximize my savings at the grocery store and minimize my stress at dinner time. You can read more about my strategy here in my Q&A post here.

After a week of blowing my grocery budget, I'm challenging myself to stay on track for the month with a pantry/freezer cleanout week. Luckily, I have several goodies stashed away as well as some fresh veggies I'll be picking up from a local CSA this week (courtesy of my friend who's on vacation and asked if I would like to pick up her share while she's gone).

Here's what's for dinner this week:

Monday: Turkey Tortilla Casserole, salad

Tuesday: Taco night (ground beef for the kiddos and these fish tacos (recipe here) for my hubs and I. {I made them last week and they are GOOD!}

Wednesday: Grilled Chicken & Caesar Salad Tortilla Wraps

Thursday Breakfast for dinner (eggs, pancakes, ham, fruit)

Friday: Upside Down Pepperoni Pizza Casserole

Saturday Grilled Brats, Grinny Beans (our family recipe -- it's a tomato & kidney bean casserole), salad, veggie sticks

Sunday: Turkey Tetrazzini, salad, bread from the bread machine.
