Meal Plan Monday | Week of June 14th (Happy Flag Day!)

I plan my family's dinners in five week blocks to maximize my savings at the grocery store and minimize my stress at dinner time. You can read more about my strategy here in my Q&A post here.

It's a busy summer week for us. We've got softball and t-ball (assuming we don't get rained out again), my daughter is at Girl Scout day camp (me too, for a couple of days), and Toy Story 3 opens on Friday (my kiddos are sooooo excited!).

Like I mentioned last week, I'll be planning our dinners on a weekly basis during the summer; it's nice to take a break from mega-planning during this quieter season.

Here's what's for dinner this week:

Monday: Terriyaki Turkey Tenderloin (one of the Honeysuckle Turkey Tenderloins that was recently on sale at Kroger as a BOGO), corn on the cob, Chinese Cabbage Salad (I didn't make this last week so it will be dinner tonight.)

Tuesday: Taco night (Kroger has cod fillets on sale for $4.99/lb this week; I'm buying 1/2 lb and making fish tacos (recipe here) for my hubs and I.

Wednesday: Awesome Slow Cooker Pot Roast (by request of my littlest; this is his fave dinner), egg noodles, salad, steamed veggies

Thursday: Grilled Chicken, Mexican Black Beans (I made this with white beans last week and it was delish; this week, I'm using black beans.), Salsa (my quick & easy homemade salsa), Salad

Friday: Toy Story 3! We'll grab something out.

Saturday: Homemade Pizza with Copycat LaRosa's Sauce

Sunday: Meatloaf, roasted red potatoes, salad, steamed veggies
