Menu Plan Monday {even though it's TUESDAY!} | First Week of Summer!



I plan my family's dinners in five week blocks to maximize my savings at the grocery store and minimize my stress at dinner time. You can read more about my strategy here in my Q&A post here.

Tomorrow marks the last day of school for my oldest two and while I have had moments of sadness thinking about how fast their childhood seems to be flying by, I am mostly feeling just one thing:

Relief.

May always comes hard for our family - so much to do, so many different events, so little energy or time. I end up feeling like I'm in the world's longest log rolling contest; I have to keep my feet dancing and running or else SPLASH! There I go, into the water!

SO...you're thinking, that's interesting, Marianne, but what does this have to do with menu planning?

Well, you know by now I love love LOVE my big old 5 Week Menu Plans - taking a long term look at our family schedule and planning around it has saved me time and money and stress. But with summer here, I am looking forward to a little freedom from practices, meetings, volunteering, and homework (the kids, not mine!).

With less to squeeze into the 24 hours God gives me every day, I can be a bit more relaxed -- or I can at least try to be; I am a recovering TypeA kinda girl. 8-)

While I still will menu plan during the summer (because it is a powerful way to save time & money even if you don't coupon), I'm going to take it one week at a time. Once school starts up again in late August, I'll be back to my normal overplanning ways.

Now that I've got all that out of the way, here's what's for dinner this week:

Monday: Grilled Chicken, Mexican Black Beans (I made this with white beans and it was delish! Mmmmm!), Salsa (my quick & easy homemade salsa), Salad

Tuesday: Taco night (One of these Tuesdays, I'm going to try to make fish tacos like these --- sooooo good!)

Wednesday: Last day of school! Pizza takeout fundraiser night!

Thursday: Breakfast for dinner: pancakes, scrambled eggs, fruit

Friday: Grilled brats & hot dogs, grilled potato skins, salad, fruit

Saturday: Leftover cleanout!

Sunday: Terriyaki Turkey Tenderloin (one of the Honeysuckle Turkey Tenderloins that was recently on sale at Kroger as a BOGO), corn on the cob, Chinese Cabbage Salad
