COOK | Leftover Makever: From Pot Roast to Italian Beef Sandwiches

If you've read any of my monthly menu plan posts over the past year or so you may have noticed that once or twice a month, I'll cook a larger main dish like pot roast or a whole chicken.  Doing so allows me to "plan for leftovers" meaning I'll toss the extra meat in the freezer to use in a later dinner recipe that month - a Leftover Makeover.

As part of my KISS 2011, I'm simplifying my posting schedule; on Mondays, I'll be posting a COOK post.  On the first Monday, I posted my January Menu Plan; last week, I posted my CopyCat Recipe Review.  On the third Monday of the month, I'll post a Leftover Makeover.

Creatively planning for leftovers in your menu plan is another smart way to save time and money in the kitchen.  ;-)

One of my family's fave dinners is Awesome Pot Roast with buttered egg noodles and veggies. All three of my kids eat it with gusto. Plus, it's a slow cooker recipe - I literally throw the ingredients together in the morning and forget about it until it's time to dish it up. Easy.

I always buy a bigger roast for this meal so I can plan a second dinner with the leftover roast beef. One of my favorite Leftover Makeover recipes for roast beef is Italian Beef Sandwiches.

Although that second recipe link is also a slow cooker recipe, I don't re-cook the beef in my Crockpot for the Italian Beef Sandwiches; I simply use that recipe as a guideline for seasoning. I'm one of those pinch-of-this-dash-of-that kind of cooks; patience has never been my strong suit.  ;-)

Here's how I make my Leftover Makeover Italian Beef Sandwiches:

1. Assemble ingredients.


:: Leftover roast beef
:: Italian Dressing (I use whatever kind I have on hand)
:: Italian Spice blend
:: Garlic Powder
:: Diced Onions
:: Chopped Peppers (I wish I could tell you those frozen chopped peppers were from my garden last summer but my pepper plants did not fare well; those peppers were marked down at Aldi a while back.  I chopped 'em and froze 'em for cooking.)

2.  Chop the leftover roast beef.


:: Pretty self-explanatory.  ;-)

3.  Saute the onions & peppers until soft.  Add the spices, Italian dressing and roast beef; cook until bubbling.

4.  Layer onto hoagie rolls with cheese, lettuce, tomatoes, and banana peppers.  Eat & be happy!


YUM!

You can add some other veggies to your saute as well depending on what you have on hand, like:

:: Mushrooms
:: Zucchini
:: Olives
