Menu Plan Monday | Week of April 18-24, 2011 {Repeats + Easter Dinner!}

I plan my family's dinners in five week blocks to maximize my savings at the grocery store and minimize my stress at dinner time. You can read more about my strategy here in my Q&A post here.

I also answered several more questions about how I plan my big ol' menus and how I stockpile shop the weekly sales with coupons; my goal is to get the best deals on items for my monthly menu plan for the lowest cost.  For more Q&A (because you're just dying to know, right?), click here.


It's a busy week at my house when I don't post my weekly menu plan until Tuesday afternoon!

Last week, my hubs was traveling again for work. That, coupled with one sick kiddo at my house, meant that I didn't make all of the meals I had scheduled in my weekly menu plan for last week.

This week, I'm repeating the recipes I didn't get to cook as well as focusing on Easter dinner recipes as well since I'm hosting for my family. You'll see that Friday and Saturday are both easy and meatless dinners for us since we're Catholic.

Since this is a "odd" week in that I've got a big holiday dinner planned, I'm skipping the printable grocery list.



Slider-Style Mini Burgers
(I made these last night and while they were ok, my kids decided they like this slider recipe better.)
Mac & Cheese
Salad & Veggie Sticks


(I'm using cooked & drained ground beef as the meat filling instead of chicken.)

I'm not cooking all the dishes - I have family bringing the majority of the sides.  Here are the recipes I'll be using:
